Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine the brown sugar, melted butter, and crushed pineapple. Stir until well combined.
  • Grease a donut ring pan with cooking spray or butter. Evenly distribute the pineapple mixture into the bottom of each donut ring cavity. Set aside.
  • In a large bowl, mix the mashed sweet potatoes, vanilla extract, and melted butter until smooth.
  • In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually add the dry mixture to the sweet potato mixture, stirring until just combined.
  • Gently fold in the drained crushed pineapple and chopped pecans, if using, until evenly distributed.
  • Spoon the donut batter into the prepared donut ring pan, filling each cavity about three-quarters full.
  • Place the pan in the preheated oven and bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the donuts to cool in the pan for about 5 minutes before inverting them onto a wire rack to cool completely.
