Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the brown sugar, melted butter, and crushed pineapple. Stir until well combined.
  3. Grease a donut ring pan with cooking spray or butter. Evenly distribute the pineapple mixture into the bottom of each donut ring cavity. Set aside.
  4. In a large bowl, mix the mashed sweet potatoes, vanilla extract, and melted butter until smooth.
  5. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually add the dry mixture to the sweet potato mixture, stirring until just combined.
  6. Gently fold in the drained crushed pineapple and chopped pecans, if using, until evenly distributed.
  7. Spoon the donut batter into the prepared donut ring pan, filling each cavity about three-quarters full.
  8. Place the pan in the preheated oven and bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
