- Heat a dry skillet over medium heat. Add mushrooms and cook 5–7 minutes until moisture evaporates. Add butter, olive oil, and shallots. Cook 5 minutes until golden. Stir in thyme, balsamic vinegar, salt, and pepper. Let cool slightly.
- Butter one side of each bread slice. On the unbuttered side, layer cheese, sautéed mushrooms, and another slice of cheese. Top with second bread slice, buttered side out.
- In a skillet or panini press, cook for 2–3 minutes per side until golden brown and cheese is melted.
Notes
For a twist, add caramelized onions or truffle oil. Use vegan swaps for plant-based version. Let mushrooms cool slightly before assembling to avoid soggy bread.
