Ingredients
  

  • 2 tbsp butter plus extra for bread
  • 1 tbsp olive oil
  • 1 shallot finely chopped
  • 2 cups mushrooms Portobello, Cremini, or Shiitake, sliced
  • 1 tsp thyme fresh or dried
  • 1 tbsp balsamic vinegar optional
  • Salt to taste
  • Pepper to taste
  • 4 slices Swiss cheese or Gruyère
  • 8 slices bread Rye, Sourdough, or Artisan
  • Butter extra for grilling

Method
 

  1. Heat a dry skillet over medium heat. Add mushrooms and cook 5–7 minutes until moisture evaporates. Add butter, olive oil, and shallots. Cook 5 minutes until golden. Stir in thyme, balsamic vinegar, salt, and pepper. Let cool slightly.
  2. Butter one side of each bread slice. On the unbuttered side, layer cheese, sautéed mushrooms, and another slice of cheese. Top with second bread slice, buttered side out.
  3. In a skillet or panini press, cook for 2–3 minutes per side until golden brown and cheese is melted.

Notes

For a twist, add caramelized onions or truffle oil. Use vegan swaps for plant-based version. Let mushrooms cool slightly before assembling to avoid soggy bread.
