Tacos al Pastor

Ingredients
  

Marinade Ingredients
  • 1 pound Pork shoulder Cut into thin slices for marinating.
  • 1/4 cup Pineapple juice Adds sweetness and helps tenderize the meat.
  • 2 tablespoons Adobo sauce For a smoky flavor.
  • 1 teaspoon Cumin Adds warmth and depth.
  • 1 teaspoon Chili powder For heat and flavor.
  • 1 teaspoon Garlic powder Enhances the overall flavor.
  • 1 teaspoon Salt To taste.
  • 1 tablespoon Olive oil For cooking.
Taco Assembly Ingredients
  • 8 small Corn tortillas For serving.
  • 1 cup Pineapple, diced For topping.
  • 1 cup Onion, diced For topping.
  • 1/2 cup Cilantro, chopped For garnish.
  • 1 lime Lime wedges For serving.

Equipment

Method
 

  1. In a mixing bowl, combine the pork, pineapple juice, adobo sauce, cumin, chili powder, garlic powder, and salt. Mix well and marinate for at least 2 hours, preferably overnight.
  2. Preheat the grill or skillet over medium-high heat. Add olive oil to the skillet if using.
  3. Remove the pork from the marinade and grill or cook in the skillet for about 5-7 minutes on each side, or until fully cooked and slightly charred.
  4. Once cooked, let the pork rest for a few minutes before slicing it into small pieces.
  5. Warm the corn tortillas on the grill or in a skillet until pliable.
  6. Assemble the tacos by placing a portion of the cooked pork on each tortilla. Top with diced pineapple, onion, and cilantro.
  7. Serve with lime wedges on the side for squeezing over the tacos.
