- In a mixing bowl, combine the pork, pineapple juice, adobo sauce, cumin, chili powder, garlic powder, and salt. Mix well and marinate for at least 2 hours, preferably overnight.
- Preheat the grill or skillet over medium-high heat. Add olive oil to the skillet if using.
- Remove the pork from the marinade and grill or cook in the skillet for about 5-7 minutes on each side, or until fully cooked and slightly charred.
- Once cooked, let the pork rest for a few minutes before slicing it into small pieces.
- Warm the corn tortillas on the grill or in a skillet until pliable.
- Assemble the tacos by placing a portion of the cooked pork on each tortilla. Top with diced pineapple, onion, and cilantro.
- Serve with lime wedges on the side for squeezing over the tacos.
