- Preheat your oven to 375°F (190°C) and grease a 9x13 inch casserole dish.
- In a large skillet over medium heat, brown the ground beef. Add diced onions and cook until softened. Season with salt, pepper, and optional spices. Drain excess fat.
- Stir in cream of mushroom soup and sour cream, mixing well with the beef. Cook for 2-3 minutes until heated through.
- Spread the beef mixture evenly across the bottom of the prepared casserole dish.
- Sprinkle 1 cup of shredded cheddar cheese over the beef mixture.
- Arrange frozen tater tots in a single layer on top of the cheese.
- Bake for 25-30 minutes, or until tater tots are golden and crispy.
- Remove from oven and top with remaining 1 cup cheddar cheese. Return to oven for 5 minutes until cheese melts.
- Let casserole cool for 5 minutes before serving.
Notes
For extra crispy tots, broil for the last 2-3 minutes. Can substitute cream of chicken soup for cream of mushroom. Store leftovers in refrigerator for 3-4 days.
