  • 8 ounces rotini pasta Fun-shaped pasta that holds dressing well.
  • 1 cup cherry tomatoes Halved for sweetness and color.
  • 1 cup cucumber Diced for a refreshing crunch.
  • 1/2 cup red onion Finely chopped for depth of flavor.
  • 1/2 cup black olives Sliced for a savory touch.
  • 1/2 cup feta cheese Crumbled for creaminess and tang.
  • 1/4 cup fresh basil Chopped for fragrance.
  • 1/4 cup olive oil Binds ingredients and adds richness.
  • 2 tablespoons red wine vinegar Adds acidity to balance flavors.
  • 1 teaspoon dried oregano Adds an earthy note.

Instructions
 

  • Boil a large pot of salted water and cook the rotini pasta according to package instructions (8-10 minutes) until al dente. Drain and rinse under cold water.
  • In a large mixing bowl, combine the cooled rotini pasta with cherry tomatoes, cucumber, red onion, black olives, feta cheese, and basil.
  • In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper. Pour the dressing over the salad and toss gently. Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad can be made a day in advance for enhanced flavors. Serve chilled for the best taste.
