- Pat the pork chops dry with paper towels to help the seasoning stick and promote a nice sear.
- Season both sides of the pork chops generously with salt and pepper.
- In a small bowl, mix together garlic powder, onion powder, smoked paprika, dried thyme, and brown sugar. Rub this mixture all over the pork chops.
- Heat a large skillet over medium-high heat. Add olive oil and unsalted butter to the skillet.
- Once the skillet is hot, carefully add the seasoned pork chops. Sear for about 4-5 minutes on each side until golden brown.
- In the last minute of cooking, drizzle apple cider vinegar over the chops to add flavor.
- Remove the pork chops from the skillet and let them rest for about 5 minutes before serving.
Notes
For best results, use high-quality bone-in pork chops and allow them to come to room temperature before cooking.
