Method
 

  1. Pat the pork chops dry with paper towels to help the seasoning stick and promote a nice sear.
  2. Season both sides of the pork chops generously with salt and pepper.
  3. In a small bowl, mix together garlic powder, onion powder, smoked paprika, dried thyme, and brown sugar. Rub this mixture all over the pork chops.
  4. Heat a large skillet over medium-high heat. Add olive oil and unsalted butter to the skillet.
  5. Once the skillet is hot, carefully add the seasoned pork chops. Sear for about 4-5 minutes on each side until golden brown.
  6. In the last minute of cooking, drizzle apple cider vinegar over the chops to add flavor.
  7. Remove the pork chops from the skillet and let them rest for about 5 minutes before serving.

For best results, use high-quality bone-in pork chops and allow them to come to room temperature before cooking.
