Method
- Preheat oven to 425°F (218°C).
- In one shallow dish, whisk the eggs. In another, combine panko, flour, seasoning salt, paprika, and pepper.
- Dip each chicken strip in egg, then press into breadcrumb mixture to coat. Set aside.
- Add butter to a rimmed baking sheet and place in oven to melt. Remove once hot.
- Carefully place coated chicken on hot pan, spacing out each piece.
- Bake for 20 minutes, flipping halfway through. Add more butter if needed.
- Check that internal temp reaches 165°F (74°C).
- Remove from oven and serve immediately for best crispiness.
Notes
Cut chicken evenly for uniform cooking. Don’t skip heating the buttered pan before placing chicken—this ensures crisping. Reheats well in a low oven.
