Ingredients
  

  • 2 pounds boneless skinless chicken breasts cut into strips (3–4 breasts)
  • 2 eggs whisked
  • 0.75 cup all-purpose flour
  • 1 cup panko bread crumbs
  • 1 tablespoon seasoning salt Lawry's preferred
  • 2 teaspoons paprika
  • 0.5 teaspoon pepper
  • 0.25 cup unsalted butter plus more if needed

Method
 

  1. Preheat oven to 425°F (218°C).
  2. In one shallow dish, whisk the eggs. In another, combine panko, flour, seasoning salt, paprika, and pepper.
  3. Dip each chicken strip in egg, then press into breadcrumb mixture to coat. Set aside.
  4. Add butter to a rimmed baking sheet and place in oven to melt. Remove once hot.
  5. Carefully place coated chicken on hot pan, spacing out each piece.
  6. Bake for 20 minutes, flipping halfway through. Add more butter if needed.
  7. Check that internal temp reaches 165°F (74°C).
  8. Remove from oven and serve immediately for best crispiness.

Notes

Cut chicken evenly for uniform cooking. Don’t skip heating the buttered pan before placing chicken—this ensures crisping. Reheats well in a low oven.
