- Gather all your ingredients to ensure a smooth cooking experience.
- In a small bowl, combine espresso powder with a tablespoon of hot water and stir until dissolved. Set aside.
- In a mixing bowl, blend mascarpone cheese and powdered sugar until smooth. Add the prepared coffee mixture and vanilla extract, mixing until well combined.
- In a large bowl, add crushed ladyfingers and pour the mascarpone mixture over them. Gently fold together using a spatula.
- Scoop out portions of the mixture using a tablespoon and roll into balls. Place on a baking sheet lined with parchment paper.
- Melt chocolate chips in a microwave-safe bowl, stirring until smooth. Dip each truffle into the melted chocolate, allowing excess to drip off, or roll in cocoa powder.
- Chill the coated truffles in the refrigerator for about 30 minutes to set the chocolate.
- Serve the truffles on a beautiful plate and enjoy with family and friends.
