Method
 

  1. Gather all your ingredients to ensure a smooth cooking experience.
  2. In a small bowl, combine espresso powder with a tablespoon of hot water and stir until dissolved. Set aside.
  3. In a mixing bowl, blend mascarpone cheese and powdered sugar until smooth. Add the prepared coffee mixture and vanilla extract, mixing until well combined.
  4. In a large bowl, add crushed ladyfingers and pour the mascarpone mixture over them. Gently fold together using a spatula.
  5. Scoop out portions of the mixture using a tablespoon and roll into balls. Place on a baking sheet lined with parchment paper.
  6. Melt chocolate chips in a microwave-safe bowl, stirring until smooth. Dip each truffle into the melted chocolate, allowing excess to drip off, or roll in cocoa powder.
  7. Chill the coated truffles in the refrigerator for about 30 minutes to set the chocolate.
  8. Serve the truffles on a beautiful plate and enjoy with family and friends.
