- 1 package 9 oz cheese tortellini
- 2 tablespoons olive oil
- 1 small onion chopped
- 2 garlic cloves minced
- 1 cup cherry tomatoes halved
- 1 cup spinach leaves
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
STEP 1: COOK THE TORTELLINI
Boil Water: In a large pot, bring salted water to a boil.
Cook Tortellini: Add the cheese tortellini and cook according to package instructions, usually about 3-5 minutes. Once cooked, drain and set aside.
STEP 2: SAUTÉ THE VEGETABLES
Heat Oil: In a large skillet, heat the olive oil over medium heat.
Sauté Onion: Add the chopped onion and cook until it becomes translucent, about 3-4 minutes.
Add Garlic: Stir in the minced garlic and cook for an additional minute until fragrant.
Add Tomatoes and Spinach: Toss in the cherry tomatoes and spinach leaves, cooking until the spinach wilts and the tomatoes soften, about 2-3 minutes.
STEP 3: MAKE THE SAUCE
Add Cream: Pour in the heavy cream and bring to a gentle simmer.
Stir in Cheese: Add the grated Parmesan cheese, stirring until melted and the sauce is creamy.
Season: Taste and season with salt and pepper as needed.

Mix Tortellini: Add the cooked tortellini to the skillet, gently tossing to coat in the sauce.
