TORTELLINI PASTA

Ingredients
  

  • 1 package 9 oz cheese tortellini
  • 2 tablespoons olive oil
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 1 cup cherry tomatoes halved
  • 1 cup spinach leaves
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Method
 

STEP 1: COOK THE TORTELLINI
  1. Boil Water: In a large pot, bring salted water to a boil.
  2. Cook Tortellini: Add the cheese tortellini and cook according to package instructions, usually about 3-5 minutes. Once cooked, drain and set aside.
STEP 2: SAUTÉ THE VEGETABLES
  1. Heat Oil: In a large skillet, heat the olive oil over medium heat.
  2. Sauté Onion: Add the chopped onion and cook until it becomes translucent, about 3-4 minutes.
  3. Add Garlic: Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add Tomatoes and Spinach: Toss in the cherry tomatoes and spinach leaves, cooking until the spinach wilts and the tomatoes soften, about 2-3 minutes.
STEP 3: MAKE THE SAUCE
  1. Add Cream: Pour in the heavy cream and bring to a gentle simmer.
  2. Stir in Cheese: Add the grated Parmesan cheese, stirring until melted and the sauce is creamy.
  3. Season: Taste and season with salt and pepper as needed.
STEP 4: COMBINE AND SERVE
  1. Mix Tortellini: Add the cooked tortellini to the skillet, gently tossing to coat in the sauce.
  2. Garnish: Serve hot, garnished with fresh basil leaves.
