- Heat olive oil in a large skillet over medium heat. Add onion, carrots, and celery. Sauté for 5-7 minutes until softened.
- Add minced garlic and cook for an additional minute.
- Increase heat to medium-high and add ground beef or lamb. Cook for 5-6 minutes until browned.
- Stir in tomato paste, beef broth, Worcestershire sauce, thyme, salt, and pepper. Simmer for 10 minutes.
- Add frozen peas and remove from heat.
- In a large pot, cover potatoes with cold water and bring to a boil. Cook for 15-20 minutes until tender.
- Drain potatoes and return to pot. Add milk, butter, salt, and pepper. Mash until smooth and creamy.
- Preheat oven to 400°F (200°C). Spread meat filling in a baking dish, then top with mashed potatoes. Smooth out the top and sprinkle with cheese if desired.
- Bake for 25-30 minutes until the top is golden brown and bubbling.
- Let cool for a few minutes before serving.
