- Heat the olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and diced onion. Cook until mushrooms are browned, about 5-7 minutes. Add minced garlic and cook for 1 more minute.
- Add the ground turkey to the skillet. Cook and crumble until no longer pink, about 6-8 minutes. Drain excess fat.
- Stir in the Italian seasoning, salt, and pepper.
- Add the fresh spinach in batches, stirring until it's all wilted, about 2-3 minutes.
- Reduce heat to low. Stir in the heavy cream and Parmesan cheese until the cheese is melted and a sauce forms. Serve immediately.
