Ingredients
  

  • 1 tbsp olive oil
  • 8 oz cremini mushrooms sliced
  • 1/2 cup yellow onion diced
  • 3 cloves garlic minced
  • 1 lb ground turkey 93/7 lean recommended
  • 1 tsp Italian seasoning
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 5 oz fresh spinach
  • 1/4 cup heavy cream
  • 1/4 cup Parmesan cheese grated

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and diced onion. Cook until mushrooms are browned, about 5-7 minutes. Add minced garlic and cook for 1 more minute.
  2. Add the ground turkey to the skillet. Cook and crumble until no longer pink, about 6-8 minutes. Drain excess fat.
  3. Stir in the Italian seasoning, salt, and pepper.
  4. Add the fresh spinach in batches, stirring until it's all wilted, about 2-3 minutes.
  5. Reduce heat to low. Stir in the heavy cream and Parmesan cheese until the cheese is melted and a sauce forms. Serve immediately.

Notes

Tip 1: For the best flavor, allow the mushrooms to get deeply browned before adding other ingredients. Tip 2: Feel free to substitute ground chicken or beef for the turkey. Tip 3: Store leftovers in an airtight container in the refrigerator for up to 3 days.
