Method
- Heat a large skillet over medium-high heat until hot.
- Rub steaks with olive oil and season both sides with garlic powder, smoked paprika, cumin, black pepper, and sea salt.
- Cook steaks for 4–5 minutes per side for medium-rare (longer if desired). Remove from skillet and rest for 5 minutes.
- Prepare rice if not already cooked. Warm beans and corn separately in small pans.
- Spoon 1 cup rice into each bowl, then top with black beans and corn.
- Slice steak against the grain into thin strips and arrange over rice and beans.
- Add sliced red onion, diced tomatoes, and cilantro. Sprinkle cheddar cheese, drizzle with sour cream, and finish with fresh lime juice.

Notes
Rest steak 5 minutes before slicing for best juiciness. Marinate 1 hour for more flavor. Swap rice with quinoa or cauliflower rice for a lighter version. For heat, add jalapeños or hot sauce. Store components separately to keep textures fresh.
