- In a large mixing bowl, mash the black beans until mostly smooth, leaving some chunks for texture.
- Add cooked quinoa, breadcrumbs, chopped onions, cumin, garlic powder, paprika, and egg to the bowl. Mix until well combined.
- If desired, fold in grated carrots and fresh herbs for added flavor.
- Shape the mixture into 4 equal-sized patties.
- Heat a skillet over medium heat and add a splash of olive oil. Cook the patties for 4-5 minutes on each side until golden brown.
- Toast the burger buns in the skillet for added crunch.
- Assemble the burgers by placing a patty on the bottom bun, followed by lettuce, tomato, pickles, and your choice of sauce.
- Top with the other half of the bun and serve immediately.
