Sweet Potato Fries Ingredients

  • 2 large Sweet potatoes Cut into fries, naturally sweet.
  • 2 tablespoons Olive oil Helps fries crisp up.

  • 1/2 teaspoon Salt Enhances flavor.
  • 1/4 teaspoon Black pepper Adjust to taste.

Instructions
 

  • Preheat the oven to 425°F (220°C) for the sweet potato fries.
  • In a large bowl, toss sweet potato fries with olive oil, paprika, salt, and pepper. Spread in a single layer on a baking sheet lined with parchment paper.
  • Bake the fries for 25-30 minutes, flipping halfway through until crispy and golden brown.
  • While the fries are baking, mash the black beans in a separate bowl, leaving some chunks for texture.
  • Add breadcrumbs, chopped onion, bell pepper, minced garlic, cumin, paprika, salt, and pepper to the mashed beans. Mix until well combined.
  • Form the mixture into patties, about 1/2 inch thick.
  • Heat olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side until golden brown.
  • Toast the burger buns in the skillet for a minute or two until golden.
  • Assemble the burgers by placing the cooked patty on the bottom half of the bun, topping with lettuce, tomato, and condiments.
  • Serve the veggie burgers alongside the crispy sweet potato fries.
