Ingredients
  

Salad Ingredients

  • 4 cups mixed salad greens such as romaine, spinach, and arugula
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper diced (any color)
  • 1/2 cup red onion thinly sliced
  • 1/4 cup olives (black or green), pitted and sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup walnuts or pecans chopped (optional)
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Instructions
 

  • Wash and dry the salad greens thoroughly. Place them in a large salad bowl.
  • Add the halved cherry tomatoes, diced cucumber, diced bell pepper, and thinly sliced red onion to the bowl.
  • Sprinkle the sliced olives and crumbled feta cheese over the salad. Optionally, add chopped walnuts or pecans.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until well combined.
  • Drizzle the dressing over the salad just before serving and toss gently to combine.

Notes

Ensure to wash vegetables thoroughly to remove dirt and pesticides. Dress the salad just before serving to keep it fresh.
