Ingredients
  

Base Ingredients

  • 1 cup cooked quinoa Rinse before cooking.
  • 1/2 cup cherry tomatoes Halved.
  • 1/2 cup cucumber Diced.
  • 1/2 cup avocado Sliced.
  • 1/2 cup cooked chickpeas
  • 1/4 cup shredded carrots
  • 1/4 cup red cabbage Thinly sliced.
  • 1 cup fresh spinach leaves
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper To taste.
  • Fresh herbs Such as parsley or cilantro for garnish.

Instructions
 

  • Rinse quinoa under cold water, then combine with water and a pinch of salt in a pot. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until fluffy.
  • In a bowl, layer fresh spinach, followed by cooked quinoa, and then add cherry tomatoes, cucumber, avocado, chickpeas, carrots, and red cabbage.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Drizzle over the assembled bowl and garnish with fresh herbs.

Notes

Ensure all ingredients are fresh and washed thoroughly. Customize with seasonal ingredients as desired.
