- In a blender, combine the cottage cheese, eggs, garlic powder, salt, black pepper, and Italian herb mix. Blend for 30-45 seconds until the mixture is completely smooth with no lumps remaining.
- Preheat your oven to 350°F (180°C).
- Line a baking sheet with parchment paper and pour the blended mixture onto it. Spread the mixture into a thin, even circle about 10-12 inches in diameter.
- Place the baking sheet in the preheated oven and bake for 30 minutes until the flatbread is set and lightly golden.
- Remove the flatbread from the oven and increase the oven temperature to 400°F (200°C).
- Spread the pizza sauce evenly over the baked flatbread, leaving a small border around the edges.
- Sprinkle the grated cheese evenly over the sauce, then distribute the pepperoni slices across the top.
- Return the flatbread with toppings to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly with golden-brown spots.
- Remove from oven and let rest for 2-3 minutes before slicing and serving.
Notes
