Cheesy Broccoli Casserole Ingredients

  • 4 cups Broccoli florets, steamed Main vegetable in the casserole.

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté for 5-7 minutes until softened.
  • Add minced garlic, dried thyme, and dried rosemary. Cook for an additional minute until fragrant.
  • Pour in chicken broth and bring to a boil. Add shredded chicken and long-grain white rice. Reduce heat to a simmer and cook for 15-20 minutes.
  • Stir in heavy cream and season with salt and pepper. Heat through for a few more minutes. Garnish with fresh parsley before serving.
  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine steamed broccoli, cooked rice, shredded cheddar cheese, cream of mushroom soup, and milk. Mix well and season with salt and pepper.
  • Transfer the mixture to a greased baking dish. If desired, sprinkle breadcrumbs on top. Bake for 25-30 minutes until bubbly and golden.
  • Serve the creamy chicken and rice soup alongside the cheesy broccoli casserole for a warm and cozy meal.
