- Preheat oven to 375°F (190°C). Grease a loaf pan with cooking spray or oil.
- In a large bowl, combine ground beef, breadcrumbs, eggs, onion, garlic, milk, 1/4 cup ketchup, Worcestershire sauce, salt, pepper, thyme, oregano, and paprika.
- Optionally, add fresh parsley for added flavor.
- Mix gently by hand or with a spoon until just combined. Avoid overmixing to prevent toughness.
- Transfer the mixture to the loaf pan and shape into a loaf.
- Spread a thin layer of ketchup on top of the loaf for glaze.
- Bake for about 1 hour, or until internal temperature reaches 160°F (71°C).
- For a crunchy top, broil during the last 5 minutes of baking.
- Let meatloaf rest for 10 minutes before slicing to allow juices to redistribute.
- Serve with mashed potatoes, vegetables, or your favorite sides.
Notes
Use a meat thermometer to check the center reaches 160°F. Resting the meatloaf is key to juicy slices. Leftovers make excellent sandwiches.
