Ingredients
  

  • 2 pounds ground beef preferably lean
  • 1 cup breadcrumbs fresh preferred
  • 2 large eggs
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1/4 cup milk
  • 1/4 cup ketchup plus extra for topping
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/4 cup fresh parsley chopped (optional)
  • Cooking spray or oil for greasing

Method
 

  1. Preheat oven to 375°F (190°C). Grease a loaf pan with cooking spray or oil.
  2. In a large bowl, combine ground beef, breadcrumbs, eggs, onion, garlic, milk, 1/4 cup ketchup, Worcestershire sauce, salt, pepper, thyme, oregano, and paprika.
  3. Optionally, add fresh parsley for added flavor.
  4. Mix gently by hand or with a spoon until just combined. Avoid overmixing to prevent toughness.
  5. Transfer the mixture to the loaf pan and shape into a loaf.
  6. Spread a thin layer of ketchup on top of the loaf for glaze.
  7. Bake for about 1 hour, or until internal temperature reaches 160°F (71°C).
  8. For a crunchy top, broil during the last 5 minutes of baking.
  9. Let meatloaf rest for 10 minutes before slicing to allow juices to redistribute.
  10. Serve with mashed potatoes, vegetables, or your favorite sides.

Notes

Use a meat thermometer to check the center reaches 160°F. Resting the meatloaf is key to juicy slices. Leftovers make excellent sandwiches.
