White Christmas Mojito

Ingredients
  

  • 3/4 cup lime juice fresh squeezed preferred
  • 1/4 cup fresh mint leaves packed, plus more for garnish
  • 1/2 cup granulated sugar
  • 1/2 cup white rum
  • 1/2 cup coconut rum
  • 1 cup canned coconut milk well shaken
  • sparkling water for topping
  • pomegranate arils for garnish
  • ice

Method
 

  1. In a large pitcher, muddle the mint leaves with the sugar and lime juice, pressing and twisting gently to release essential oils without crushing the leaves into bitter bits.
  2. Using a strainer, remove the muddled mint leaves if desired for a cleaner presentation (this step is optional).
  3. Add white rum, coconut rum, and coconut milk to the pitcher and stir well to combine all ingredients into a smooth base.
  4. Fill four glasses halfway with ice, leaving room for the cocktail mixture and sparkling water.
  5. Pour the coconut rum mixture into each glass until about 3/4 full.
  6. Top off each glass with sparkling water to taste, adjusting the amount based on preferred fizz level and drink strength.
  7. Garnish with fresh mint sprigs and pomegranate arils, then serve immediately while cold and fizzy.

Notes

Base mixture can be prepared up to 2 days ahead and stored in refrigerator. Add sparkling water just before serving to maintain carbonation. Adjust sparkling water amount to control drink strength and fizz level.
