- In a large pitcher, muddle the mint leaves with the sugar and lime juice, pressing and twisting gently to release essential oils without crushing the leaves into bitter bits.
- Using a strainer, remove the muddled mint leaves if desired for a cleaner presentation (this step is optional).
- Add white rum, coconut rum, and coconut milk to the pitcher and stir well to combine all ingredients into a smooth base.
- Fill four glasses halfway with ice, leaving room for the cocktail mixture and sparkling water.
- Pour the coconut rum mixture into each glass until about 3/4 full.
- Top off each glass with sparkling water to taste, adjusting the amount based on preferred fizz level and drink strength.
- Garnish with fresh mint sprigs and pomegranate arils, then serve immediately while cold and fizzy.
Notes
Base mixture can be prepared up to 2 days ahead and stored in refrigerator. Add sparkling water just before serving to maintain carbonation. Adjust sparkling water amount to control drink strength and fizz level.
