Ingredients

  • 1 cup Dill pickle spears or slices Choose crisp and flavorful pickles.
  • 1 cup Shredded cheese (cheddar or mozzarella) Fresh cheese enhances flavor.
  • 1/2 cup Almond flour Low-carb option; regular flour can be used if not concerned about carbs.
  • 1 large Egg For the egg wash.
  • 1 teaspoon Garlic powder Adds flavor to the egg wash.
  • 1 teaspoon Onion powder Adds flavor to the egg wash.
  • to taste Salt and pepper For seasoning.
  • as needed oil Vegetable or canola oil For frying.

Equipment

  • Microwave-safe bowl
  • Deep skillet
  • whisk
  • Paper towels
  • Airtight container

Method

  1. Drain and pat dry the pickles with paper towels to remove excess moisture.
  2. In a microwave-safe bowl, combine shredded cheese and almond flour. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  3. Once the cheese mixture cools slightly, divide it into portions and flatten each into a thin wrap.
  4. Wrap each pickle spear or slice completely with the cheese mixture, ensuring all sides are covered.
  5. In a bowl, whisk the egg with garlic powder, onion powder, salt, and pepper to create an egg wash.
  6. Dip each cheese-wrapped pickle into the egg wash, ensuring they are fully coated.
  7. Heat oil in a deep skillet over medium-high heat until hot. Test the oil by dropping a small piece of cheese mixture in; if it sizzles, it's ready.
  8. Carefully place the coated pickles in the hot oil, frying in batches for about 2-3 minutes on each side until golden and crispy.
  9. Remove the fried pickles and let them drain on paper towels. Serve warm with your favorite dipping sauce.
