Instructions
STEP 1: PREPARE THE MARINADE
In a large bowl, combine the soy sauce, pineapple juice, brown sugar, sesame oil, minced garlic, and minced ginger. Whisk everything together until well mixed.
STEP 2: MARINATE THE CHICKEN
Place the chicken in a resealable plastic bag or a glass dish. Pour the marinade over the chicken, making sure it is completely covered. Seal the bag or cover the dish and refrigerate for at least 2 hours. For the best flavor, marinate overnight.
STEP 3: COOK THE CHICKEN
Choose one of the following cooking methods:
Grilling: Preheat your grill to medium-high heat. Grill the marinated chicken for 6-8 minutes on each side, basting with extra marinade occasionally. Cook until the internal temperature reaches 165°F.
Baking: Preheat your oven to 375°F. Place the chicken in a baking dish and cover it with foil. Bake for 30-40 minutes, then remove the foil and bake for an additional 10 minutes to achieve a golden finish.
Slow Cooking: Place the marinated chicken in a slow cooker. Cook on low for 6-8 hours until the chicken is tender and juicy.
STEP 4: SERVE
Serve the huli huli chicken alongside your choice of grilled vegetables, rice, or a fresh salad. You can also offer sauces like barbecue, sriracha, or ranch dressing for dipping.
