Ingredients
  

  • 1 pound Cooked jumbo shrimp Peeled and chopped, provides protein.

Method
 

  1. If using raw shrimp, boil or sauté until pink and opaque, about 2-3 minutes. Let cool, then chop.
  2. In a small bowl, whisk together lime juice and olive oil. Add salt and pepper to taste.
  3. In a large mixing bowl, combine shrimp, red onion, tomato, and avocado. Gently toss to combine.
  4. Drizzle the lime dressing over the salad and toss gently to coat all ingredients.
  5. Transfer to a serving platter or individual bowls and garnish with chopped cilantro.
  6. Serve immediately or chill for a short time before serving.
