Instructions
If using frozen shrimp, thaw it completely and pat dry with a paper towel. Chop the shrimp into bite-sized pieces.
In a small bowl, squeeze the juice of two fresh limes, add olive oil, salt, and pepper. Whisk until well combined.
In a large mixing bowl, combine the chopped shrimp, red onion, diced tomato, and avocado. Gently mix to combine.
Pour the lime dressing over the shrimp mixture and gently toss until everything is evenly coated.
Transfer the salad to a serving dish and garnish with chopped cilantro. Serve immediately.
Notes
This salad is best served fresh. To prevent the avocado from browning, prepare it just before serving.
