- If using frozen shrimp, thaw it completely and pat dry with a paper towel. Chop the shrimp into bite-sized pieces.
- In a small bowl, squeeze the juice of two fresh limes, add olive oil, salt, and pepper. Whisk until well combined.
- In a large mixing bowl, combine the chopped shrimp, red onion, diced tomato, and avocado. Gently mix to combine.
- Pour the lime dressing over the shrimp mixture and gently toss until everything is evenly coated.
- Transfer the salad to a serving dish and garnish with chopped cilantro. Serve immediately.
Notes
This salad is best served fresh. To prevent the avocado from browning, prepare it just before serving.
