- In a large bowl, combine olive oil, lime juice, lime zest, minced garlic, ground cumin, smoked paprika, chili powder, salt, and pepper. Mix well to create the marinade.
- Add the chicken cubes to the marinade and toss to coat evenly. Cover with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- If using wooden skewers, soak them in water for about 30 minutes to prevent burning. If using metal skewers, skip this step.
- Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
- Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Check the internal temperature of the chicken with a meat thermometer; it should reach 165°F (75°C).
- Remove the skewers from the grill and let them rest for a few minutes before serving. Garnish with chopped cilantro.
