- In another bowl, mix the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Fold in the grated zucchini and any optional add-ins like nuts or chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
