- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
- Wash and grate the zucchinis. Squeeze out excess moisture using a clean kitchen towel.
- In a bowl, combine the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg. Whisk until well mixed.
- In a large mixing bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until combined. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in the grated zucchini and nuts if using.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
