Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. Wash and grate the zucchinis. Squeeze out excess moisture using a clean kitchen towel.
  3. In a bowl, combine the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg. Whisk until well mixed.
  4. In a large mixing bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until combined. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in the grated zucchini and nuts if using.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
