Ingredients
  

  • 2 medium Zucchinis Spiralized into noodles.
  • 1 ripe Avocado The star of the sauce, adds creaminess.
  • 2 tablespoons Fresh lemon juice Adds brightness to the sauce.
  • 1 clove Garlic Minced for flavor.
  • 1/4 cup Fresh basil leaves Adds a fragrant herbal note.

Instructions
 

  • Spiralize the zucchinis using a spiralizer or slice them into thin strips with a vegetable peeler. Set aside.
  • In a blender or food processor, combine the avocado, lemon juice, minced garlic, basil leaves, salt, and pepper. Blend until smooth and creamy. Add water if needed to adjust consistency.
  • In a large bowl, toss the zucchini noodles with the avocado sauce until well coated.
  • Serve the zucchini noodles on a plate or bowl, garnished with halved cherry tomatoes and pumpkin seeds.
