Description

Seafood Delight is a flavorful mix of ocean treasures.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound scallops, cleaned
  • 1 pound mussels, cleaned and debearded
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup white wine (or vegetable broth)
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the seafood: Clean the shrimp, scallops, and mussels. Pat them dry with a paper towel.
  2. Sauté aromatics: Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and cook for an additional minute.
  3. Cook the seafood: Add cherry tomatoes and cook for 2-3 minutes. Pour in white wine (or vegetable broth) and bring to a simmer. Add shrimp, scallops, and mussels. Cover and cook for 5-7 minutes, or until mussels open and seafood is cooked through. Discard any unopened mussels.
  4. Finish and serve: Squeeze in lemon juice and add lemon zest. Season with salt and pepper. Garnish with chopped parsley and serve immediately.
