Description

Toffee Coffee Cake is a delightful treat for coffee lovers, featuring a rich cake topped with a sweet toffee mixture.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup brown sugar, packed
  • 1/2 cup unsalted butter
  • 1 cup chopped pecans or walnuts
  • 1/2 cup toffee bits

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, sour cream, and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  5. In a saucepan over medium heat, melt the brown sugar and butter together, stirring until smooth. Remove from heat and stir in the chopped pecans or walnuts and toffee bits.
  6. Pour half of the cake batter into the prepared baking pan and spread it evenly. Pour half of the toffee topping over the batter. Add the remaining cake batter on top and finish with the rest of the toffee topping.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  9. Slice and serve the toffee coffee cake warm or at room temperature, perfect with a cup of coffee!
