  • 2 lb salmon fillet skin on or off, about 900g
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter melted
  • 3 tablespoons honey
  • 2 cloves garlic minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • Fresh rosemary or thyme for garnish, optional
  • Lemon slices for garnish, optional
  • Pomegranate seeds or cranberries for garnish, optional

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Place salmon fillet on the prepared baking sheet. Drizzle with olive oil and season generously with salt and black pepper.
  3. In a small bowl, whisk together melted butter, honey, minced garlic, Dijon mustard, lemon juice, and lemon zest until well combined and smooth.
  4. Using a pastry brush, brush half of the honey butter glaze over the salmon in an even layer. Bake for 12-15 minutes.
  5. Remove salmon from oven and brush with the remaining glaze. Return to oven for 5 more minutes, or until salmon flakes easily with a fork and reaches an internal temperature of 145°F.
  6. Optional: For extra caramelization, broil for 2 minutes at the end, watching carefully to prevent burning.
  7. Let salmon rest for 2-3 minutes. Garnish with fresh rosemary or thyme, lemon slices, and pomegranate seeds or cranberries. Serve immediately.

Notes

Use fresh, high-quality salmon for best results. Don't overbake - salmon should flake easily but remain moist. For extra caramelization, broil for 2 minutes at the end. Fresh lemon juice and zest are key to bright flavor. Line baking sheet with parchment or foil for easy cleanup.
