Frosting Ingredients

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Carefully stir in the boiling water and red food coloring until the batter is smooth.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  8. In a mixing bowl, beat the softened cream cheese and butter together until creamy and smooth.
  9. Gradually add the powdered sugar and vanilla extract, mixing until well combined. If the frosting is too thick, add heavy cream one tablespoon at a time until the desired consistency is reached.
  10. Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top.
  11. Place the second cake layer on top and frost the top and sides of the cake with the remaining cream cheese frosting.
