French Onion Meatloaf

A savory and hearty meatloaf inspired by French onion soup, with caramelized onions, melty cheese, and rich flavors perfect for comfort dinners or elegant meals.

Ingredients
  

  • 2 pounds ground beef or substitute ground turkey for leaner option
  • 2 large onions thinly sliced
  • 2 tablespoons olive oil
  • 1 cup breadcrumbs or gluten-free alternative like almond flour
  • 0.5 cup shredded cheese Swiss or Gruyère
  • 1 large egg
  • 2 cloves garlic minced
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 teaspoon sugar optional, for onions
  • 1 tablespoon onion soup mix optional, for extra flavor

Method
 

  1. In a large skillet, heat olive oil over medium heat. Add sliced onions and a pinch of salt. Cook for 20–25 minutes, stirring occasionally, until golden and soft. Optional: Add sugar to enhance sweetness. Let cool.
  2. In a large bowl, combine ground beef, breadcrumbs, cheese, egg, minced garlic, garlic powder, thyme, salt, and pepper. Gently fold in the cooled onions. Avoid overmixing.
  3. Preheat oven to 375°F (190°C). Line a baking sheet with parchment or grease a loaf pan. Shape the meat mixture into a loaf or place it in the pan. Sprinkle extra cheese on top if desired.
  4. Bake for 50–60 minutes, or until internal temperature reaches 160°F (71°C). Optional: Brush with ketchup or onion gravy in last 10 minutes.
  5. Let the meatloaf rest 5–10 minutes before slicing to retain juices.

Notes

Add broth or milk for extra moisture. Caramelize onions slowly for deep flavor. Don't overmix the meat. Freeze raw or cooked.
