Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  • In a large mixing bowl, mash the ripe bananas with a fork until smooth, then stir in the melted butter.
  • Mix in the baking soda and salt, then add the sugar, beaten egg, and vanilla extract, stirring until well blended.
  • Gently fold in the all-purpose flour until just combined, being careful not to overmix.
  • Pour the batter into the prepared loaf pan and bake for 60-65 minutes, checking for doneness with a toothpick.
  • Let the banana bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes
