Method
 

  1. Preheat the oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth, then stir in the melted butter.
  3. Mix in the baking soda and salt, then add the sugar, beaten egg, and vanilla extract, stirring until well blended.
  4. Gently fold in the all-purpose flour until just combined, being careful not to overmix.
  5. Pour the batter into the prepared loaf pan and bake for 60-65 minutes, checking for doneness with a toothpick.
  6. Let the banana bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
