- Wash the baby potatoes thoroughly under cold water and cut each potato in half. Place them in a large mixing bowl.
- Mince the garlic cloves finely and combine them with the grated Parmesan cheese in a separate bowl.
- Pour the olive oil over the halved potatoes, then add the dried oregano, dried thyme, salt, and pepper. Toss until the potatoes are well coated.
- Sprinkle the garlic and Parmesan mixture over the potatoes and mix gently to combine.
- Preheat your oven to 400°F (200°C). Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast the potatoes for 25-30 minutes, stirring halfway through, until golden brown and tender.
- Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
