Ingredients
  

  • 2 cans Pink salmon 14.75 oz each, drained
  • 1 cup Breadcrumbs For binding the patties
  • 2 Eggs Beaten
  • 1/4 cup Onion Finely chopped
  • 2 tablespoons Lemon juice Freshly squeezed
  • 1/4 teaspoon Salt To taste
  • 1/4 teaspoon Black pepper To taste
  • 2 tablespoons Vegetable oil For frying

Instructions
 

  • In a large bowl, combine the drained canned salmon, breadcrumbs, beaten eggs, chopped onion, lemon juice, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
  • Using your hands, shape the mixture into 8 patties, each about 1/2 inch thick. Ensure they are compact to hold together during cooking.
  • Heat the vegetable oil in a skillet over medium heat. Once the oil is hot, carefully place the patties in the skillet. Cook for 3-4 minutes on each side, or until they are golden brown and crispy.
  • Once cooked, transfer the patties to a plate lined with paper towels to drain excess oil. Serve hot, and enjoy your delicious salmon patties!

Notes

Serve with a side of tartar sauce, fresh greens, or in a sandwich for a delicious meal.
