Ingredients

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, mash the ripe banana until smooth. Add almond butter, honey, and vanilla extract, and mix until creamy.
  • In another bowl, combine rolled oats, baking soda, salt, and cinnamon. Stir until evenly mixed.
  • Pour the dry ingredients into the banana mixture and stir gently until combined. Fold in chocolate chips and nuts if using.
  • Scoop tablespoon-sized portions of dough onto a lined baking sheet, leaving 2 inches between each cookie. Flatten slightly with the back of a spoon.
  • Bake for 10-12 minutes, or until lightly golden around the edges. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
