Ingredients
  

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 1/4 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon sriracha adjust to taste
  • 1/2 cup coconut milk or regular milk
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 2 tablespoons chopped peanuts for garnish
  • 2 tablespoons chopped fresh cilantro for garnish

Method
 

  1. Heat the vegetable oil in a frying pan over medium heat. Season the chicken with salt and pepper.
  2. Add the chicken to the pan and cook until golden brown on both sides (about 5 to 7 minutes per side), ensuring it is fully cooked.
  3. In a bowl, combine minced garlic, minced ginger, peanut butter, soy sauce, rice vinegar, honey, sriracha, coconut milk, lime juice, and sesame oil. Whisk until smooth and well blended.
  4. Pour the sauce over the cooked chicken in the skillet. Reduce heat to low and let the chicken simmer in the sauce for about 5 to 10 minutes to absorb flavors. Stir occasionally to ensure even coating.
  5. Remove from heat. Serve hot over steamed rice or noodles. Garnish with chopped peanuts and cilantro before enjoying.

Notes

For a nut-free version, substitute peanut butter with sunflower seed butter or tahini. Marinate chicken for 30 minutes for deeper flavor.
